Grape varieties: 80% old grenache (over 80 yrs old); 20% mourvèdre (50 yrs old)
Yield: 25 hl/ha
Terroir: Several parcels:
Sandy clay with sandstone and limestone from the Oligocene period in the foothills of the Dentelles.
Miocene marl and sandstone from the Miocene period around Cazaux.
Blue marl from the Pliocene period on the terraces of the Garrigues.
Harvest: Our oldest Vacqueyras Grenache grapes are harvested by hand at the end of the harvest.
Vinification: Partially (50%) de-stemmed harvest with a temperature-controlled vinification (between 25 and 30°C maximum) in stainless steel vats with light pumping over and racking. Maceration lasts 35 to 40 days, with the skin cap immersed once the alcoholic fermentation is complete. Pneumatic pressing.
Ageing: 1/3 of the cuvée is aged in 300-litre 2 to 3 wine old barrels for 18 months. The rest in stainless steel, then enamel vats.

Food pairing suggestions
Traditionally paired with strong flavoured dishes such as game stew, beef bourguignon or a brochette of thrush.
Also, veal tournedos “Rossini” style with truffled spelt risotto, pigeon salami, or spicier dishes such as ribs in barbecue sauce, duck breast with green peppercorn sauce, butternut squash roasted in cumin, and lamb tagine with polenta.
