Grape Varieties: clairette planted in 1922
Yield: 30 hl/ha
Terroir: limestone sands and marls in the area of Gigondas vinyard.
Vinification: direct pressing then barreling into 228L barrels for FA+FML and two years of aging on lees.

Food pairing suggestions

Starters: scallop carpaccio, saffron sour cream, jets of hops in white sauce, hummus on oriental bread toasts.
Main courses: cassolette of scallops, shellfish a la plancha or BBQ, white meats in cream sauce.
Cheeses: Salers, Epoisses, Mont d’Or for France. Emmental and other matured Swiss Gruyeres.

Serving temperature: 10 °C to 12 °C (50 °F to 54 °F) as an aperitif ; 15 °C to 16 °C (59 °F to 61 °F) for the meal.
