Description

Grape Varieties: grenache, counoise, clairette
Yield: 30 hl/ha
Terroir: slopes consisting of sandstone and Miocene marl, this place is called “Les Cazaux”.
Maturation: fermentation in old oak barrels, tempered by several vinifications of white wines, with aging on lies for 6 months.
Vintage: 2021

A gastronomic rosé made from old Grenache, Cinsault and Clairette vines grown on slopes.

The manual harvest early in the morning is followed by a long and gentle pressing. Fermentation takes place in oak barrels (softened by the passage of a few vintages of our old vine white wine) with an ageing on lees for 8 months.

Tasting

A rare vintage with elegant aromas of rose and cherry. The palate is smooth and long.
Only 1500 bottles are being produced.

To be enjoyed chilled with aubergine caviar, tandoori chicken or prawns a la plancha.

Serving temperature: avoid serving straight out of the fridge, but serve at 12-14 °C (54-57 °F) for the meal.
